Fish markets are facilities where the mandatory first sale of all fishery products takes place. The control of the unloading and the first sale is a task for the authorization or concession holders of the fish market, as well as the fishermen’s guilds, cooperatives, or even the Port Authority in some cases.
The starting price of the product is set with the first sale and it is labelled for the first time. During this process, the product from inshore fishing and shellfish gathering of best quality gets the certification mark that distinguishes it from others. That mark will be with the product throughout the marketing process, as long as the rest of the chain operators are certified users.
